These are fantastic with anything grilled.
Ingredients:
2 lbs. golf-ball sized Yukon Gold potatoes, scrubbed well and cut in half
2 Tbsps good quality extra virgin olive oil
1 Tbsp (more or less) Santa Maria Style Seasoning *
(if you can't find Santa Maria Style Seasoning, you can substitute a
mix of coarsely ground sea salt, coarsely ground black pepper,
granulated garlic, sugar and dried parsley flakes in roughly equal
proportions, or until you like the blend)
Directions:
1. Preheat oven to 425 F. In a large bowl, toss all of the ingredients together.
2. Spread evenly on a metal baking dish (jelly roll pan) and roast for
about 45 minutes until the potatoes are nicely browned all over and
pierce easily with a fork. Stir them well about ever 10 minutes to
ensure even browning.
