This recipe is from The Thrill Of The Grill by Chris Schlesinger and John Willoughby. We usually make them for a big party, so I've doubled the ingredients.
Ingredients:
6 large garlic cloves, chopped
juice of 4-5 lemons
1/4 cup extra virgin olive oil
5 to 10 dashes of Tabasco sauce, depending on your taste
6 Tbsps mixed fresh herbs, chopped (whatever you've got: basil, parsley, sage, thyme, oregano or rosemary)
80 chicken wing pieces (about a 10 lb. bag)
Directions:
Preheat grill to medium / hot
Season wings with salt and pepper
Grill until golden brown, turning about every 5 minutes until cooked through
Toss wings together with sauce in a large bowl and serve immediately..
I
like to pre-cook the wings in a 350 F oven for about 15 to 20 minutes
so some of the fat cooks out. This minimizes flare-ups on the grill.
