Garlic is a double-duty crop for us. In addition to the heads, the stiffneck varieties that we grow send up a "scape" or shoot in the late spring/early summer. These scapes are absolutely delicious, with all of the flavor of regular garlic without a lot of the bite.
1/2 lb. organic scapes (chopped into 1" sections)In a food processor or blender, combine the scapes and olive oil. Pour mixture into bowl and blend the cheese in by hand.
