This is a wonderfully refreshing and cooling accompaniment to just about any spicy Indian dish.
Ingredients:
1 large cucumber (we’re growing Diva this year)
½ tsp salt
2 scallions
1 small jalapeno pepper
1 ½ cups low-fat plain yogurt
1 tsp lemon juice
1 tsp ground cumin
½ cup chopped fresh mint
Directions:
1. Peel and seed the cucumber. Chop coarsely, sprinkle with ½ tsp salt
and let drain while you prepare the rest of the ingredients.
2. Slice the scallions thinly, using all of the white part and about
half the green. Remove the seeds and ribs from the jalapeno and mince
fine.
3. Rinse and drain the cucumber and pat dry with paper towels. Combine
the cucumber, scallions, jalapeno in a bowl with the yogurt. Stir in
the lemon juice, cumin and about half the chopped mint.
4. Just before serving, garnish with the rest of the chopped mint.
