We often will do pot luck dinner gatherings, since most all of our friends love to cook much as we do! Whenever our friend Lynne asks what she can bring, we always ask here to bring these tasty little morsels. They always go fast, so make sure you set aside a few for yourself before passing them around!
Ingredients:
20 to 30 queen sized olives (either plain or stuffed with garlic, jalapeno, almond, onion, anchovy - whatever you like)
1/4 lb grated cheddar cheese, or your favorite cheese
1/4 cup of butter
1 cup flour
Dash of salt
1 Tbsp. Cognac or Sherry
Directions:
Cut the cheese and butter together
Cut in flour and salt until dough resembles pie dough
Add the Cognac or Sherry and stir in.
Knead to blend all ingredients
Pinch a piece of dough and wrap it around an olive. Roll between your palms to form a ball. You'll have to experiment a little with how much dough to use, depending on the size of your olives.
Bake in a 400 degree oven for 10 to 12 minutes.
