Ingredients
4 -5 cups diced apples
2 cups sugar (or 2 cups Splenda Baking Blend)
1/2 cup canola oil
1 cup chopped nuts (pecans or walnuts)
2 eggs, well beaten
2 teaspoons vanilla
3 Tablespoons orange or lemon juice
2 cups unbleached white flour (general purpose, not self
rising)
2 teaspoons baking soda
2 teaspoons cinnamon
½ teaspoon nutmeg
1 teaspoon salt
Directions
Heat oven to 350 degrees. Mix apples, ½ cup of sugar or
Splenda, cinnamon and nutmeg thoroughly. Add oil, nuts, eggs, orange juice and vanilla. Mix remaining
dry ingredients together and add to apple mixture. Bake in a greased 13x9 inch
pan for 1 hour. The cake will take less
time to bake if you use Splenda – start checking at about 45 minutes.
Serve frosted or unfrosted. This cake is one of those that you can pretty much finish and serve however you like. If you want to frost it, a sour cream frosting is very nice. Whipping cream or ice cream go very well with it, too. My favorite way to eat it, though, is with no frosting at all.
